Good quality milk kefir grains are soft, white, large (around the size of a popped popcorn), and puffy. We recommend that you always inspect the quality of your milk kefir grains.
Also, make sure to always check for signs of contamination --- dust, dirt, hair, insects, molds, maggots, etc.
Activation is the process of waking up the dormant microorganisms in the kefir grain to prepare them for fermentation to produce milk kefir.
If the milk kefir grains you have are live grains, you can skip the activation process and immediately jump to the next step --- fermentation.
